The Dinner Project: Week 2

January 24, 2011

Monday, January 17 – Accidentally super spicy black bean soup & homemade bread with sharp cheddar cheese (Lesson learned: chipotle powder is waaaay spicier than chili powder)

Tuesday, January 18 – Indian chickpea stew with homemade naan

Wednesday, January 19 – Homemade gnocchi with roasted tomato sauce

Thursday, January 20 – Red lentil dal with brown rice

Friday, January 21 (Drew’s Birthday!) – The most delicious shrimp scampi ever & caramel turtle brownies (from a box) topped with moose tracks ice cream

Saturday, January 22 – Krautflaken (This was my least favorite dinner ever growing up and it wasn’t until recently that I began to understand the simple pleasure of caramelized onions, cabbage and pasta.  The key to its tastiness is a nice amount of olive oil and lots of pepper)

Sunday, January 23 – Salmon burgers with roasted sweet potatoes (photo above) & carrot cake cookies for dessert
