The Dinner Project: Week 3

January 31, 2011

Monday, January 24 – Chili with black beans, garbanzos, sweet potato & corn

Tuesday, January 25 – Pasta with parsley pesto & topped with a poached egg – (poached eggs are my new fav, they make any simple meal feel classy)

Wednesday, January 26 – Senegalese Peanut Soup  (recipe here)

Thursday, January 27 – Date night at home! Chipotle shrimp & soft tacos with turnip greens, caramelized onions, feta & chipotle salsa (photo above…five stars)

Friday, January 28 – Garlic Fideo Soup – (basically sauted thin noodles, a whole lot of garlic, paprika, parsley & broth….the most delicious peasant food evs)

Saturday, January 29 – Leftovers from Friday & popcorn

Sunday, January 30 – Roasted chicken, quinoa with caramelized onions, turnip greens & feta & oatmeal raisin cookies for dessert
